A Taste of Christmas: The Ultimate Coastal Roasties

What’s the most important part of the Christmas dinner? For many, it’s the roast potatoes – and they have to be perfect. We’re talking golden, crispy edges, a light, fluffy inside, and a flavour that has everyone coming back for more.

This year, we’re sharing our secret to making your festive roasties truly unforgettable: a simple, savoury twist from the Yorkshire Coast.

Adding our Everyday Seaweed Seasoning just before the final roast gives the potatoes an incredible, deep umami flavour that you just can't get from salt alone. It’s a mineral-rich, savoury boost that perfectly complements the goose fat and herbs.

  • Cook time:  1 hour
  • Serves:  6-8 (generously!)

Ingredients:

  • 1.5kg Maris Piper or King Edward potatoes
  • 100g goose fat (or 100ml Olive oil)
  • 2-3 heaped teaspoons SeaGrown Everyday Seaweed Seasoning
  • 2-3 cloves of garlic, lightly crushed (optional)
  • A few sprigs of fresh rosemary or thyme (optional)
  • Sea salt

Method:

  1. Preheat your oven to 200°C (180°C Fan).
  2. Peel the potatoes and chop them into large, evenly-sized chunks (you want lots of angles for crispy edges!). Rinse them in cold water to remove excess starch.
  3. Place the potatoes in a large pan of cold, salted water. Bring to the boil, then lower the heat and parboil for 10 minutes until the edges are just starting to soften.
  4. While the potatoes are boiling, spoon your goose fat (or oil) into a large, heavy-bottomed roasting tin and place it in the hot oven to heat up.
  5. Drain the potatoes thoroughly in a colander. Let them steam dry for a minute, then give the colander a good shake to fluff up the edges – this is the secret to a perfect crispy finish!
  6. Carefully remove the hot tin from the oven. One by one, place the potatoes into the hot fat. Turn them over so they are evenly coated, then add the crushed garlic cloves and herbs if you're using them.
  7. Roast for 30 minutes.
  8. Take the tin out and give the potatoes a quick turn with a spatula. Now for the magic: sprinkle the SeaGrown Everyday Seaweed Seasoning all over the potatoes, ensuring they are well coated.
  9. Return them to the oven for another 30-40 minutes, or until they are deeply golden, wonderfully crisp, and absolutely irresistible.
  10. Serve immediately and enjoy your ultimate coastal roasties!
