This autumn, we've created the perfect soup to answer that call. Our Hearty Lentil & Root Vegetable Soup is a simple, one-pot wonder, packed with seasonal goodness. The secret to its incredible savoury depth is a generous sprinkle of our Everyday Seaweed Seasoning, which adds a rich, umami flavour that perfectly complements the earthy vegetables.
It's a bowl of pure comfort, designed to warm you from the inside out.

Ingredients:
- 1 tbsp olive oil
- 2 onions, chopped
- 2 carrots, peeled and diced
- 2 celery sticks, chopped
- 2 parsnips, peeled and diced
- 2 cloves of garlic, crushed
- 2 tsp SeaGrown Everyday Seaweed Seasoning
- 1 tsp dried thyme
- 200g dried red lentils, rinsed
- 1.5 litres of good quality vegetable stock
- A handful of fresh parsley, chopped (for garnish)
- Salt and freshly ground black pepper to taste
Method:
- Heat the olive oil in a large saucepan or stockpot over a medium heat. Add the onions, carrots, celery, and parsnips and cook gently for 10-15 minutes until softened and sweet.
- Add the crushed garlic, SeaGrown Everyday Seaweed Seasoning, and dried thyme. Cook for another minute until fragrant.
- Stir in the rinsed red lentils, then pour in the vegetable stock. Bring to the boil, then reduce the heat to a simmer.
- Cover and let it gently bubble away for 25-30 minutes, or until the lentils are soft and the vegetables are tender.
- Season with salt and pepper to taste. For a smoother soup, you can blend half of it and stir it back into the pot.
- Serve hot in big bowls, garnished with a sprinkle of fresh parsley and a slice of crusty bread.
Good to know: This recipe makes a generous batch, and the leftovers freeze beautifully. Perfect for a quick and hearty meal on another day!
